Ingredients
- 2 medium zucchinis, sliced into ¼ inch rounds
- ½ cup grated Parmesan cheese
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp black pepper
- Optional: ¼ cup breadcrumbs for extra crunch
Instructions
- Slice the zucchini into thin ¼ inch rounds.
- Toss the zucchini slices with olive oil in a bowl until coated.
- In another bowl, mix Parmesan, garlic powder, onion powder, Italian seasoning, salt, and pepper.
- Press each zucchini slice into the Parmesan mixture, coating both sides.
- If desired, sprinkle breadcrumbs on top for added crunch.
- Place the zucchini slices in a single layer in the air fryer basket without overlapping.
- Air fry at 400°F (200°C) for 8–10 minutes, flipping halfway, until golden and crispy.

- Fresh zucchini works best; frozen zucchini may become soggy.
