Description

This cozy and simple Amish cinnamon sugar coffee cake is soft, buttery, and filled with a sweet cinnamon swirl. Topped with a crunchy cinnamon-sugar crust, it's the perfect easy bake for breakfast, brunch, or a comforting afternoon treat.

Ingredients

  • For the cake batter:
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup melted butter
  • For the cinnamon sugar swirl and topping:
  • 1/2 cup brown sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8x8-inch baking dish.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, mix milk, egg, vanilla, and melted butter.
  4. Add wet ingredients to dry and stir until just combined—do not overmix.
  5. Pour half the batter into the prepared pan.
  6. Mix brown sugar and cinnamon, then sprinkle half over the batter.
  7. Pour remaining batter on top and sprinkle with the rest of the cinnamon-sugar mix.
  8. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool for 10 minutes before slicing and serving.

Notes

  • Add chopped pecans or walnuts to the cinnamon layer for extra texture.
  • Mix in raisins or mini chocolate chips for variation.
  • For a sweet finish, drizzle a glaze of powdered sugar and milk once cooled.
  • Buttermilk can be used instead of milk—just adjust leavening accordingly.
  • Doubles well for a 9x13-inch pan; increase bake time to 40–45 minutes.
