Description

Andes Mint Muddy Buddies are an irresistibly crunchy and sweet no-bake snack perfect for parties, holiday gatherings, or cozy movie nights. With a luscious blend of chocolate, peanut butter, and mint flavors from Andes Mint bars and mint-flavored M&M's, these treats offer a delightful mix of textures and a refreshing minty twist.

Ingredients

Main Ingredients

  • 9 cups Rice Chex cereal
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup smooth peanut butter
  • 1/4 cup butter (1/2 stick), room temperature
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar

Mix-ins

  • Mint flavored M&M's (dark green, light green and white)
  • Hershey Andes Mint bars, broken into smaller pieces

Instructions

  1. Prepare the Cereal: In a large mixing bowl, add the Rice Chex cereal and set aside to make coating easier later.
  2. Melt the Chocolate Mixture: In a medium microwave-safe bowl, combine the semi-sweet chocolate chips, smooth peanut butter, and room-temperature butter. Microwave for 1 minute, then stir.
  3. Smooth the Mixture: Microwave the mixture for an additional 30 seconds or until it becomes smooth and creamy, stirring thoroughly.
  4. Add Flavor: Stir in the vanilla extract to infuse rich flavor into the chocolate mixture.
  5. Coat the Cereal: Pour the warm chocolate mixture over the Rice Chex cereal, mixing gently with hands or a spatula to ensure all cereal pieces are evenly coated.
  6. Add Powdered Sugar: Transfer the coated cereal into a gallon-sized Ziploc bag and add the powdered sugar. Seal the bag and gently shake until all cereal pieces are fully coated in powdered sugar.
  7. Cool the Snack: Line a baking sheet with wax paper. Pour the coated cereal onto the sheet and spread evenly to cool and set the coating.
  8. Add Mint Mix-ins and Serve: Once the snack has cooled to room temperature, transfer it to a serving bowl. Fold in mint-flavored M&M's and chopped Andes Mint pieces for a fresh minty crunch. Enjoy immediately!

Notes

  • Make sure the butter is at room temperature to melt smoothly with the chocolate and peanut butter.
  • For best results, use a microwave-safe bowl for melting ingredients and stir frequently to avoid burning.
  • You can substitute Rice Chex with another crispy cereal if desired.
  • This recipe can be stored in an airtight container at room temperature for up to 3 days to maintain freshness.
  • Adjust the quantity of mint M&M's and Andes Mint bars based on your taste preference for mint flavor.
