Description

Banana Pudding Easter Truffles are delightful bite-sized treats combining creamy banana pudding filling with crushed vanilla wafers, encased in a pastel-colored white chocolate shell. Perfect for Easter celebrations, these truffles are simple to make, visually appealing, and bursting with rich banana and vanilla flavors.

Ingredients

For the Filling:

  • 2 cups crushed vanilla wafers
  • 1/2 cup cream cheese, softened
  • 1 package (3.4 oz) banana pudding mix (dry)
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

For the Coating:

  • 2 cups white chocolate chips or candy melts
  • Food coloring in pastel colors

For Decoration (Optional):

  • Crushed vanilla wafers
  • Easter sprinkles
  • Colored chocolate drizzle

Instructions

  1. Make the Filling: In a mixing bowl, combine the crushed vanilla wafers, softened cream cheese, dry banana pudding mix, milk, and vanilla extract. Mix thoroughly until a smooth, dough-like mixture forms.
  2. Shape the Truffles: Roll the mixture into 1-inch balls using your hands. Place each ball on a parchment-lined baking sheet. Once all are formed, chill the truffles in the refrigerator for 30 to 45 minutes to firm up.
  3. Melt the Chocolate: In a microwave-safe bowl, melt the white chocolate chips or candy melts, heating in 30-second intervals and stirring between each until completely smooth. If desired, separate the chocolate into portions and add pastel food coloring to create different colors.
  4. Coat the Truffles: Remove the chilled truffles from the fridge. Using a fork or dipping tool, dip each ball into the melted white chocolate, allowing excess chocolate to drip off before placing them back on the parchment-lined sheet.
  5. Decorate: While the coating is still wet, sprinkle crushed vanilla wafers, festive Easter sprinkles, or drizzle colored chocolate over the truffles for added decoration and texture.
  6. Set and Serve: Allow the chocolate coating to set at room temperature or in the refrigerator for 15 to 20 minutes. Serve the truffles in a decorative bowl or package them as Easter gifts.

Notes

  • Ensure the cream cheese is softened for easier mixing and a smoother filling texture.
  • Use parchment paper to prevent sticking during chilling and coating.
  • Adjust food coloring quantities to achieve the desired pastel shades without altering chocolate consistency.
  • These truffles can be stored in the refrigerator for up to one week in an airtight container.
  • For a stronger banana flavor, add mashed ripe banana to the filling, but adjust liquid quantities accordingly.
