Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 cups cooked white rice
- 1/2 cup shredded carrots
- 1 cup steamed broccoli
- 1/2 cucumber, sliced
- 1 avocado, diced
- 2 green onions, chopped
- 1/4 cup mayonnaise
- 1 tbsp sriracha
- 1 tbsp honey
- 1 tsp rice vinegar
Instructions
- Season chicken breasts with olive oil, salt, and pepper.
- Grill or sear chicken until golden and cooked through; let rest.
- Prepare bowl base with a scoop of warm white rice.
- Arrange shredded carrots, steamed broccoli, sliced cucumber, and diced avocado around the rice.
