Description

This BBQ Chicken Grilled Cheese recipe is a delicious twist on the classic grilled cheese sandwich, featuring shredded BBQ chicken, melted Monterey Jack and Cheddar cheeses, pickled jalapeños, and red onions, all sandwiched between crispy, buttery sourdough bread slices. Ingredients

Bread

  • 4 large or 8 small thick slices of Sourdough, Tiger, or Giraffe Bread

Chicken Mixture

  • 2 packed cups / 250g-300g cooked shredded chicken
  • 2/3 cup / 160g BBQ sauce (or to preference)
  • 1/4 cup pickled jalapeños, finely diced (or to spice preference)
  • 1/4 - 1/3 cup finely diced red onion

Cheeses

  • 4 square slices of Monterey Jack or Pepper Jack cheese
  • 4 square slices of Cheddar cheese (or second cheese of choice)

Other

  • Butter, as needed


Instructions

  1. Prepare the chicken mixture: In a medium-sized mixing bowl, combine the shredded cooked chicken, BBQ sauce, finely diced pickled jalapeños, and finely diced red onion. Mix well to evenly coat the chicken with the sauce and spices. Set aside.
  2. Assemble the sandwich: Take two slices of bread and place them butter-side down in a large pan while the heat is off. Butter the top sides of these slices as well later. On the bread in the pan, layer two slices of Monterey Jack cheese, then spread half of the BBQ chicken mixture evenly over the cheese. Add two slices of Cheddar cheese on top of the chicken, then place another slice of bread on top.
  3. Cook the sandwich: Butter the top side of the sandwich and then turn the heat to medium. Cook the sandwich, frying both sides until the bread is golden brown and crispy, and the cheeses have melted inside. Carefully flip the sandwich to avoid spilling the filling. If making two large sandwiches, handle gently while flipping.
  4. Serve: Slice the grilled cheese sandwich in half and serve immediately while warm and gooey for the best taste experience.
