These baked apple fritters offer the cozy flavors of traditional fritters without the mess of frying. Soft and fluffy inside, slightly crisp outside, and topped with a sweet vanilla glaze, they make a perfect fall-inspired treat.
Ingredients
- ¾ cup all-purpose flour
- ¾ cup white whole wheat flour (or extra all-purpose)
- ½ cup brown sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ¼ tsp allspice
- ¼ tsp salt
- 6 Tbsp cold butter, cut into pieces
- ½ cup milk (whole milk yields richer flavor)
- 1 large egg
- 1 tsp vanilla extract
- 1 cup chopped firm apple (like Granny Smith or Honeycrisp)
- 1 cup confectioners’ sugar
- 2 Tbsp milk
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 400 °F and line a baking sheet with a silicone mat or parchment.
- Whisk the dry ingredients—flours, brown sugar, baking powder, spices, salt. Cut in the cold butter until the mixture looks like coarse crumbs.
- Whisk together milk, egg, and vanilla; add to the dry ingredients and stir until just combined. Fold in the chopped apples.
- Drop batter by ¼‑cup scoops onto the baking sheet. For smaller fritters, use tablespoons.
- Bake 11–13 minutes (start checking at 8 minutes for small fritters), until bottoms are golden and centers set.
- Switch oven to broil. Whisk glaze together and brush a thin layer over fritters. Broil 2–4 minutes until tops sparkle and glaze bubbles.
- Remove and brush on the rest of the glaze while fritters are warm. Let glaze set before serving.
Notes
- Use firm, tart apples like Granny Smith or Honeycrisp for best flavor and texture.
- To make ahead, bake and refrigerate unglazed fritters, then broil with glaze before serving.
- Store in an airtight container at room temperature for 2 days or refrigerate for 5 days.
- Reheat in a 350 °F oven for 5–10 minutes to regain texture.
- Freeze unglazed fritters for up to 2 months and glaze after reheating.
