Description

Warm, spiced baked apple fritters packed with juicy apples and topped with a light vanilla glaze. A healthier twist on a classic fall treat, perfect for brunch or snacking.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 eggs
  • 1/3 cup milk
  • 1 tsp vanilla extract
  • 2 cups diced apples (Granny Smith or Honeycrisp)
  • 2 tbsp unsalted butter, melted
  • 1 cup powdered sugar (for the glaze)
  • 2-3 tbsp milk or cream (for the glaze)
  • 1/2 tsp vanilla extract (for the glaze)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, mix granulated sugar, brown sugar, eggs, milk, and vanilla extract until well combined.
  4. Fold wet ingredients into the dry ingredients, stirring until just mixed.
  5. Gently fold in diced apples and melted butter.
  6. Drop batter onto the prepared baking sheet using a spoon or scoop, forming small mounds.
  7. Bake for 15–18 minutes or until golden and cooked through.
  8. While baking, whisk together glaze ingredients in a small bowl.
  9. Drizzle glaze over slightly cooled fritters and let it set before serving.

Notes

  • Add chopped nuts like pecans or walnuts for extra crunch.
  • Try maple syrup in the glaze for a twist.
  • Increase cinnamon or add cloves for spicier flavor.
  • Dust with cinnamon sugar as an alternative to the glaze.
  • Store in an airtight container at room temperature for 2 days or refrigerated for 5 days.
  • Reheat in a 300°F oven for 5 minutes or microwave for 15–20 seconds.
