Description

These blueberry butter swim biscuits are a rich, no-fuss Southern-style treat baked in melted butter for golden, crispy edges and a soft, tender center. Paired with sweet homemade blueberry butter, they’re the perfect easy addition to your breakfast, brunch, or cozy weekend baking list.


Ingredients

  • For the Swim Biscuits:
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1¾ cups buttermilk
  • ½ cup unsalted butter, melted
  • For the Blueberry Butter:
  • ½ cup unsalted butter, softened
  • ⅓ cup fresh or thawed blueberries
  • 2 tbsp powdered sugar (adjust to taste)
  • ½ tsp vanilla extract
  • Optional: ½ tsp lemon zest

Instructions

  1. Preheat oven to 450°F (230°C). Pour melted butter into an 8x8-inch baking dish.
  2. In a mixing bowl, combine flour, baking powder, salt, and sugar. Stir in buttermilk until just combined.
  3. Pour the sticky dough over the melted butter and gently spread it to fill the dish.
  4. Score the top of the dough into 9 equal squares using a knife.
  5. Bake for 20–25 minutes, until the top is golden and edges are crisp.
  6. Meanwhile, lightly mash blueberries in a bowl, then mix with softened butter, powdered sugar, vanilla, and lemon zest if using.
  7. Let biscuits cool slightly, then serve warm with a generous dollop of blueberry butter.
