Ingredients
- For the Swim Biscuits:
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp salt
- 1 tbsp granulated sugar
- 1¾ cups buttermilk
- ½ cup unsalted butter, melted
- For the Blueberry Butter:
- ½ cup unsalted butter, softened
- ⅓ cup fresh or thawed blueberries
- 2 tbsp powdered sugar (adjust to taste)
- ½ tsp vanilla extract
- Optional: ½ tsp lemon zest
Instructions
- Preheat oven to 450°F (230°C). Pour melted butter into an 8x8-inch baking dish.
- In a mixing bowl, combine flour, baking powder, salt, and sugar. Stir in buttermilk until just combined.
- Pour the sticky dough over the melted butter and gently spread it to fill the dish.
- Score the top of the dough into 9 equal squares using a knife.
- Bake for 20–25 minutes, until the top is golden and edges are crisp.
- Meanwhile, lightly mash blueberries in a bowl, then mix with softened butter, powdered sugar, vanilla, and lemon zest if using.
- Let biscuits cool slightly, then serve warm with a generous dollop of blueberry butter.
