Blueberry Lavender Fizz is a refreshing, lightly floral sparkling drink made by simmering fresh blueberries, lavender, lemon juice, and sugar to create a fragrant syrup, which is then combined with sparkling water and lime for a delightful summer beverage.
Ingredients
Blueberry Lavender Syrup
- 4 cups fresh blueberries
- 1 cup water
- 1/2 cup sugar
- Juice of 1 lemon
- 4-6 sprigs of lavender (each 1-2 inches long)
To Serve
- Ice cubes
- 1 lime wedge per serving
- Sparkling water, to top
- Lime wheels or additional blueberries for garnish (optional)
Instructions
- Make the blueberry lavender syrup: In a heavy-bottomed saucepan, combine the blueberries, water, and sugar. Use a potato masher to crush the berries gently. Add the lemon juice and lavender sprigs. Bring the mixture to a boil over medium-high heat, then reduce heat to medium and simmer for 30 minutes, stirring occasionally, until the liquid reduces and thickens.
- Strain the syrup: Place a fine mesh strainer over a large bowl and pour the cooked mixture through it. Use a spatula to gently press the solids to extract all the syrup. Discard the solids. Allow the syrup to cool completely, then store it in the refrigerator for up to a week.
- Prepare the drink: Fill a tall glass with ice cubes. Add 1/4 cup of the chilled blueberry lavender syrup. Squeeze in a lime wedge and fill the glass to the top with sparkling water. Give a light stir to combine.
- Garnish and serve: Garnish with lime wheels or additional blueberries if desired. Serve immediately and enjoy the refreshing blueberry lavender fizz.

- Use fresh blueberries for the best flavor; frozen can be used but may alter texture.
