Description

Broccoli Chicken Divan is a classic, comforting casserole featuring layers of tender chicken and fresh broccoli smothered in a creamy, cheesy sauce, and topped with buttery breadcrumbs.

Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 4 cups fresh broccoli florets
  • 1 can (10.75 oz) condensed cream of chicken soup
  • ⅓ cup milk
  • ½ cup mayonnaise
  • 1 teaspoon lemon juice
  • ½ teaspoon curry powder (optional)
  • 1 cup shredded cheddar cheese
  • ½ cup bread crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Steam the broccoli florets until just tender, about 3-5 minutes, then drain.
  3. In a large baking dish, layer the cooked chicken and steamed broccoli.
  4. In a medium bowl, mix together the condensed soup, milk, mayonnaise, lemon juice, and curry powder if using.
  5. Pour the sauce mixture evenly over the chicken and broccoli in the baking dish.
  6. Sprinkle the shredded cheddar cheese on top.
  7. Combine the bread crumbs with melted butter and sprinkle over the cheese layer.
  8. Bake for 25-30 minutes, or until the casserole is bubbly and the bread crumbs are golden brown.
  9. Let the casserole sit for a few minutes before serving to allow the sauce to thicken slightly.

Notes

  • Use frozen broccoli if fresh is unavailable, but be sure to thaw and drain well.
  • Make ahead by assembling the dish and refrigerating up to 24 hours before baking.
  • Use gluten-free soup and breadcrumbs for a gluten-free version.
  • Enhance flavor by adding sautéed mushrooms, bell peppers, or spinach.
  • Try crushed crackers or cornflakes instead of breadcrumbs for topping.
