Description

This quick and spicy buffalo chicken flatbread is the perfect appetizer or weeknight dinner, featuring tangy buffalo sauce, creamy blue cheese, and melty mozzarella on a crispy flatbread base.


Ingredients

  • 2 flatbreads or naan
  • 2 cups cooked chicken, chopped
  • 1/3 cup buffalo wing sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup blue cheese dressing or crumbles
  • 2 green onions, thinly sliced
  • 1 tbsp light olive oil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Lightly brush flatbreads with olive oil and place on a parchment-lined sheet pan. Bake for 5 minutes to crisp.
  3. Spread buffalo wing sauce evenly over flatbreads.
  4. Top with chopped chicken and shredded mozzarella cheese.
  5. Drizzle or dot with blue cheese dressing or crumbles.
  6. Bake for 12–15 minutes until edges are browned. Optionally, broil for 1–2 minutes for extra golden cheese.
  7. Remove from oven, sprinkle with sliced green onions, and add extra buffalo sauce or blue cheese if desired.
  8. Slice and serve warm.

Notes

  • Use ranch instead of blue cheese for a milder flavor.
  • Swap flatbread with pita, pizza dough, or mini flatbreads.
  • Add roasted veggies or plant-based chicken for a vegetarian version.
  • Store leftovers in the fridge for up to 2 days.
