A cozy and comforting bake combining tender butternut squash and apples with warm spices, perfect for cooler days as a dessert or a side dish.
Ingredients
- 1 medium butternut squash (peeled, seeded, and cubed)
- 3 medium apples (cored and sliced)
- ¼ cup brown sugar
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ¼ cup butter, melted
- ½ cup chopped nuts (optional)
Instructions
- Preheat oven to 350 °F (175 °C).
- Peel and cube the butternut squash. Core and slice the apples, leaving the skin on if desired.
- In a large bowl, combine squash cubes, apple slices, brown sugar, cinnamon, nutmeg, and melted butter. Toss to coat evenly.
- Transfer the mixture into a greased baking dish. Sprinkle chopped nuts on top, if using.
- Bake for about 45 minutes, or until squash is tender and apples are soft.
- Let cool slightly before serving.
Notes
- Use apples that hold their shape, like Granny Smith or Honeycrisp.
- For added sweetness, mix in dried cranberries or drizzle with maple syrup.
- Make it vegan by using plant-based butter or coconut oil.
- Can be prepped ahead and stored in the fridge until baking time.
- Leftovers store well in the fridge for 3–4 days.
