Description

A cozy and comforting bake combining tender butternut squash and apples with warm spices, perfect for cooler days as a dessert or a side dish.

Ingredients

  • 1 medium butternut squash (peeled, seeded, and cubed)
  • 3 medium apples (cored and sliced)
  • ¼ cup brown sugar
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ cup butter, melted
  • ½ cup chopped nuts (optional)

Instructions

  1. Preheat oven to 350 °F (175 °C).
  2. Peel and cube the butternut squash. Core and slice the apples, leaving the skin on if desired.
  3. In a large bowl, combine squash cubes, apple slices, brown sugar, cinnamon, nutmeg, and melted butter. Toss to coat evenly.
  4. Transfer the mixture into a greased baking dish. Sprinkle chopped nuts on top, if using.
  5. Bake for about 45 minutes, or until squash is tender and apples are soft.
  6. Let cool slightly before serving.

Notes

  • Use apples that hold their shape, like Granny Smith or Honeycrisp.
  • For added sweetness, mix in dried cranberries or drizzle with maple syrup.
  • Make it vegan by using plant-based butter or coconut oil.
  • Can be prepped ahead and stored in the fridge until baking time.
  • Leftovers store well in the fridge for 3–4 days.
