Description

These crispy and flavorful Cabbage Fritters are an easy, delicious way to enjoy a vegetable-packed snack or side dish. Made with shredded cabbage, grated carrots, scallions, and a simple blend of spices, these fritters come together quickly and are fried to golden perfection. Perfect for a light lunch, appetizer, or addition to any meal, they can be served warm or cold and are adaptable for gluten-free and grain-free diets.


Ingredients

Vegetables

  • 16 oz shredded cabbage (about 7 packed cups, roughly 1/3 medium head)
  • 2 medium-small carrots, grated
  • 2-3 scallions, thinly sliced (or 1 regular onion)
  • 2 cloves garlic, minced

Dry Ingredients & Spices

  • 4-5 tbsp flour (use gluten-free or grain-free flour as needed)
  • 1 tsp sea salt
  • 1/2 tsp black pepper, ground
  • 1/2 tsp paprika or smoked paprika
  • 1/2 tsp ground coriander (optional)

Other

  • 3 large eggs
  • 3-4 tbsp fat for frying (ghee, avocado oil, or grape-seed oil recommended)


Instructions

  1. Prepare the vegetables: Wash and cut the cabbage, carrots, scallions (or onion), and garlic as described. Use a mandoline slicer to shred the cabbage finely, grate the carrots, thinly slice the scallions or onion, and mince the garlic to prepare all ingredients for mixing.
  2. Combine ingredients: In a large bowl, add the shredded cabbage, grated carrots, sliced scallions or onion, minced garlic, flour, spices (sea salt, black pepper, paprika, and optional coriander), and eggs. Toss lightly or use your hands gently to coat and mix everything evenly without drawing out too much water from the cabbage.
  3. Heat the skillet and fat: Place a non-stick or ceramic-coated 10-inch skillet on medium-low heat (about level 3 on stove). Heat the pan for 3 minutes, then add 3-4 tablespoons of fat (ghee or oil), letting it heat for about 1 minute to prepare for frying.
  4. Form and fry fritters: Using your hands, form balls from the cabbage mixture and place them in the heated skillet. Press down with a spatula or your hands to flatten into thin patties to ensure even cooking inside. Fry each fritter for about 3 minutes per side until golden brown and crispy. Repeat with remaining mixture, adding more fat if needed.
  5. Serve: Serve the cabbage fritters warm or cold as a snack, side dish, or light meal.
