Description

Carli's Bee Cheese is a creamy, vegan cheese made from soaked cashews, nutritional yeast, lemon juice, and agar agar, offering a smooth texture and subtle tang, perfect as a spread or salad topping.


Ingredients

  • 2 cups raw cashews, soaked for at least 4 hours
  • 2 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1/4 cup water (or more as needed for consistency)
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon agar agar powder

Instructions

  1. Soak the cashews in water for at least 4 hours to soften them. Drain and rinse the cashews after soaking.
  2. In a high-speed blender or food processor, combine the soaked cashews, nutritional yeast, lemon juice, apple cider vinegar, salt, garlic powder, and onion powder. Add about 1/4 cup of water and blend until smooth and creamy, adding more water if necessary to achieve the desired consistency.
  3. Meanwhile, dissolve the agar agar powder in 1/4 cup of water in a small saucepan. Bring it to a simmer over medium heat, stirring constantly until it thickens and becomes clear. This process usually takes about 5-7 minutes.
  4. Once the agar mixture has thickened, slowly pour it into the blended cashew mixture while continuing to blend, making sure everything is well combined.
  5. Transfer the mixture into a mold or bowl of your choice and let it cool in the fridge for at least 2-3 hours or until it sets.
