Description

These Cheesy Garlic Chicken Wraps are a quick and delicious meal perfect for lunch or dinner. Stuffed with a flavorful mix of cooked chicken, garlic, light mayonnaise, Greek yogurt, hot sauce, and cheese, then grilled until golden and crispy, these wraps offer a tasty and satisfying blend of savory and spicy flavors with a melty cheese finish.

Ingredients

Wrap and Filling

  • 2 large tortillas (regular or low-carb/high-protein)
  • 7 oz cooked chicken, chopped (about 200 grams, rotisserie recommended)
  • 2 garlic cloves, minced or grated (adjust to taste)
  • 2 tablespoons light mayonnaise
  • 1 tablespoon light Greek yogurt (or plain yogurt)
  • 2 teaspoons hot sauce (such as Frank’s)
  • ¼ teaspoon salt
  • 3 oz grated cheese (about 90 grams, cheddar blend recommended)
  • 1 green onion, chopped

For Cooking

  • Olive oil spray

Instructions

  1. Mix chicken filling: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, Greek yogurt, hot sauce, and salt. Mix thoroughly until all ingredients are evenly incorporated.
  2. Lay out wrap: Place your tortilla on a clean surface. On the lower third of the tortilla, sprinkle about 2 tablespoons of grated cheese evenly.
  3. Add chicken mixture: Spoon approximately ⅔ cup of the prepared chicken mixture over the cheese layer. Then add another tablespoon of cheese on top, and sprinkle with chopped green onion for freshness and flavor.
  4. Fold wrap: Fold in the sides of the tortilla to enclose the filling, then roll it tightly from the bottom up to secure the wrap.
  5. Prepare pan: Heat a non-stick skillet or pan over medium-high heat. Lightly spray the surface with olive oil to prevent sticking and to help crisp the wrap.
  6. Cook wraps: Place the wraps seam-side down in the hot pan to seal them. Cook for 3 to 4 minutes on each side until the tortilla is crispy and golden brown. To ensure the filling is heated through and the cheese melts perfectly, cover the pan with a lid during cooking.
  7. Slice and serve: Remove the wraps from the pan, slice each wrap in half diagonally, and serve immediately while warm and melty.

Notes

  • Using rotisserie chicken saves time and adds extra flavor, but you can use any cooked chicken.
  • Adjust the amount of garlic and hot sauce to your personal heat preference.
  • Light mayonnaise and Greek yogurt keep the filling creamy yet lower in fat.
  • Cooking with the wrap seam-side down first helps to keep them sealed during cooking.
  • Covering the pan while cooking helps the cheese melt and the filling to warm through evenly.
  • For a low-carb option, use low-carb or high-protein tortillas.
