Ingredients
- 2 cups mashed potatoes (leftover or freshly made)
- 2 large eggs
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped chives or green onions
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray or butter (for greasing the muffin tin)
Instructions
- Preheat the oven to 400°F (200°C) and lightly grease a mini muffin tin with cooking spray or butter.
- In a large bowl, mix mashed potatoes, eggs, cheddar cheese, Parmesan, chives, salt, and pepper until well combined.
- Spoon the mixture into the prepared muffin tin, filling each cup and gently pressing down.
- Bake for 20–25 minutes, until the tops are golden brown and slightly crispy.
- Let them cool in the tin for a few minutes before gently lifting them out.
- Serve warm with a sprinkle of extra herbs if desired.
