Tender chicken breasts are seared and simmered in a creamy, herbaceous Boursin cheese sauce for a comforting yet elegant dish.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- ¼ teaspoon onion powder
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 cup low-sodium chicken broth
- 5.2 ounces Boursin cheese (Garlic & Fine Herbs flavor)
- 1 handful fresh spinach (optional)
- Chopped fresh parsley (optional, for serving)
Instructions
- Pat chicken breasts dry and pound to an even thickness. Season with garlic powder, salt, pepper, and onion powder.
- Heat olive oil and butter in a large skillet over medium-high heat. Sear chicken for 6-7 minutes per side until golden brown and internal temperature reaches 165°F. Remove from skillet and set aside.
- Add chicken broth to the skillet and stir in Boursin cheese. Stir until smooth and let reduce for 5 minutes.
- Return chicken to skillet, add optional spinach, and heat through. Serve garnished with chopped parsley.
Notes
- Add fresh spinach for extra greens.
- Try different Boursin cheese flavors like Shallot & Chive.
- Use low-sodium broth and omit added salt for a lighter version.
- Store leftovers in an airtight container in the fridge for up to 3 days.
