Ingredients

  • 1 lb chicken tenderloins
  • Salt and pepper, to taste
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 stick (1/2 cup) butter
  • 2 tablespoons minced garlic
  • 1/4 teaspoon red pepper flakes
  • 1 1/2 teaspoons salt, divided
  • 1/2 cup chicken broth + 1 tablespoon lemon juice
  • 1 1/2 cups uncooked white rice
  • 3 cups chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season chicken with salt, pepper, and garlic powder.
  2. Heat olive oil in a large nonstick skillet over medium heat. Cook chicken until browned and cooked through. Remove and keep warm.
  3. In the same skillet, melt butter. Add garlic, red pepper flakes, and 1/2 teaspoon salt. Cook for 3 minutes, stirring.
  4. Stir in 1/2 cup broth and lemon juice. Increase heat to medium-high and reduce for 5 minutes. Reserve 2 tablespoons of this sauce.
  5. Add rice and toast for 3–4 minutes. Pour in 3 cups broth and remaining 1 teaspoon salt. Simmer, cover, and cook on medium-low for 20 minutes.
  6. Stir in Parmesan cheese, return chicken to the pan, and drizzle reserved sauce over the top. Cover, remove from heat, and let sit for 5 minutes.
  7. Garnish with parsley and additional Parmesan if desired.

Notes

  • Use long-grain white rice to prevent mushiness.
  • Add vegetables like spinach or peas in the last 5 minutes of cooking for variety.
  • Store leftovers in an airtight container and reheat with a splash of broth.
  • To make it creamy, add a splash of cream after the rice is done.
