Ingredients
Salad Base
- 2 cups rotisserie chicken breast, shredded
- 1 head romaine lettuce, shredded
- 1 head iceberg lettuce, shredded
- 1 cup shredded red cabbage
- 1 cup shredded carrots
- 1/4 cup thinly-sliced green onions
- 3 tablespoons cilantro leaves (optional), roughly chopped
Salad Dressing and Toppings
- Asian salad dressing (see recipe)
- 1 pinch crushed red pepper flakes
- 1 tablespoon sesame seeds
- 1/2 cup slivered almonds
- 1 cup crispy salad topper wonton strips
Instructions
- Marinate the Chicken: Add shredded rotisserie chicken to a large bowl and pour half of the Asian salad dressing over it. Toss thoroughly to coat all chicken pieces evenly. Let it rest for at least 10 minutes to allow the flavors to penetrate the chicken.
- Combine the Vegetables: Add the shredded romaine lettuce, shredded iceberg lettuce, shredded red cabbage, shredded carrots, sliced green onions, and chopped cilantro to the bowl with the marinated chicken. Toss everything together to combine well.
- Add Remaining Dressing: When ready to serve, pour the remaining Asian dressing over the entire salad mixture and toss again until all ingredients are evenly dressed.
- Garnish and Serve: Sprinkle crushed red pepper flakes, sesame seeds, slivered almonds, and the crispy wonton strips evenly over the top of the salad. Serve immediately to enjoy the crisp textures and fresh flavors.
