Ingredients
Strawberry Yogurt Mixture
- 1 cup strawberries, diced (stems removed)
- 1/2 cup plain Greek yogurt
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup semisweet chocolate chips
- 2 tsp coconut oil
Instructions
- Prepare Baking Sheet: Line a large baking sheet with parchment paper to prevent sticking and make handling easier.
- Mix Strawberries and Yogurt: Place the diced strawberries in a large bowl, then add the Greek yogurt and vanilla extract. Stir gently until the strawberries are thoroughly coated with the yogurt mixture.
- Form Clusters: Using a spoon, scoop the strawberry-yogurt mixture onto the parchment-lined baking sheet, making about 8 clusters. Each cluster should be approximately 2 tablespoons. Space them out to prevent sticking.
- Freeze Clusters: Transfer the baking sheet to the freezer and freeze the clusters for 30 to 45 minutes until they are firm but not rock-hard.
- Melt Chocolate: About 10 minutes before the clusters are done, place the chocolate chips and coconut oil in a small microwave-safe bowl. Microwave in 30-second bursts, stirring between each, until the chocolate is fully melted and smooth.
- Dip Clusters in Chocolate: Remove the frozen clusters from the freezer. Quickly dip each cluster into the melted chocolate using a large spoon, coating them thoroughly, and then place them back on the baking sheet. Repeat until all clusters are coated.
- Set Chocolate: Let the clusters sit at room temperature for a few minutes to allow the chocolate to harden into a crisp shell. Once set, they are ready to enjoy!
Notes
- Use fresh strawberries that are firm and ripe for the best flavor and texture.
- Make sure the clusters are well frozen before dipping to avoid melting the chocolate too quickly.
- Substitute dark chocolate chips if you prefer a richer, less sweet coating.
- Store leftovers in an airtight container in the freezer to maintain freshness.
- Ensure to work quickly during the dipping process to prevent clusters from melting.
