Ingredients
Banana Bread Batter
- 3 overripe mashed bananas
- 4 tablespoons melted vegan butter
- ¾ cup maple syrup
- 1 cup unsweetened almond or oat milk
- 1 teaspoon vanilla extract
- 1 ½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 1 ½ cups regular or gluten free all purpose flour
- 1 cup old fashioned rolled oats
Cinnamon Swirl
- 4 tablespoons melted vegan butter
- ⅓ cup light brown sugar
- 2 tablespoons cinnamon
Frosting
- ¾ cup powdered sugar
- 2 tablespoons melted vegan butter
- 2 oz softened vegan cream cheese
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly to prevent sticking.
- Make Banana Bread Batter: In a mixing bowl, combine the mashed overripe bananas, melted vegan butter, maple syrup, unsweetened almond or oat milk, and vanilla extract. Mix until smooth and well incorporated.
- Add Dry Ingredients: Add baking powder, baking soda, cinnamon, salt, all-purpose flour (regular or gluten free), and rolled oats to the wet mixture. Stir gently until all ingredients are combined but do not overmix.
- Layer Batter and Cinnamon Swirl: Pour half of the banana bread batter into the prepared loaf pan. In a separate small bowl, mix melted vegan butter, light brown sugar, and cinnamon to create the cinnamon swirl. Spread half of this swirl mixture evenly over the batter in the pan.
- Add Remaining Batter and Swirl: Pour the remaining batter over the cinnamon layer. Top with the rest of the cinnamon swirl mixture, spreading it evenly over the top.
- Bake: Bake in the preheated oven for 50-60 minutes, until a toothpick inserted into the center comes out clean. Baking times may vary slightly depending on your oven.
- Cool Before Frosting: Remove the bread from oven and allow it to cool completely in the pan on a wire rack to ensure the frosting will not melt.
- Prepare Frosting: While the bread cools, mix powdered sugar, melted vegan butter, and softened vegan cream cheese until smooth and creamy.
- Frost and Serve: Once the bread is fully cooled, spread the frosting evenly over the top. Slice and enjoy this delicious cinnamon roll banana bread!
Notes
- Use overripe bananas for the best natural sweetness and flavor.
- Check for doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
- Allow the bread to cool completely before frosting to prevent the frosting from melting.
- You can substitute almond milk with oat milk or other plant-based milks for similar results.
