Ingredients

For the Croutons

  • 1/2 French Baguette, cut in half lengthwise and thinly sliced (1/4" thick)
  • 3 Tbsp extra virgin olive oil

  • 2 Tbsp grated Parmesan cheese

For the Caesar Salad Dressing

  • 2 small garlic cloves, minced (1 tsp)
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 tsp fresh lemon juice
  • 1 1/2 tsp red wine vinegar
  • 1/3 cup extra virgin olive oil
  • 1/2 tsp sea salt (or to taste)
  • 1/8 tsp black pepper (plus more to serve)

For the Salad

  • 1 large romaine lettuce (or 2 small heads)
  • 1/3 cup Parmesan cheese, shredded or shaved


Instructions

  1. Make the Croutons: Preheat your oven to 350˚F. Cut the baguette in half lengthwise, then slice diagonally into 1/4" thick pieces. Arrange the bread slices on a baking sheet.
  2. Prepare Garlic Oil: In a small bowl, combine 3 tablespoons of extra virgin olive oil with 1 teaspoon of finely minced garlic. Drizzle this garlic oil evenly over the bread slices and sprinkle with 2 tablespoons of grated Parmesan cheese.
  3. Toss and Bake: Toss the bread slices gently until they are evenly coated with the oil and cheese mixture. Spread them out in a single layer on the baking sheet and bake for 10-12 minutes, or until the croutons turn light golden and crisp to your liking.
  4. Make the Caesar Dressing: In a small bowl, whisk together minced garlic, Dijon mustard, Worcestershire sauce, lemon juice, and red wine vinegar until combined.
  5. Emulsify the Dressing: Slowly drizzle in 1/3 cup extra virgin olive oil while whisking constantly to create a smooth dressing. Then whisk in salt and black pepper, adjusting seasoning to taste.
  6. Prepare the Lettuce: Rinse the romaine lettuce thoroughly and dry it completely using a salad spinner or clean towels. Chop or tear the leaves into bite-sized pieces.
  7. Assemble the Salad: Place the lettuce in a large serving bowl. Sprinkle generously with shredded or shaved Parmesan cheese and the cooled croutons.
