Description
The Coconut Lime Daiquiri is a tropical, layered frozen cocktail that blends the tangy zest of lime with the creamy sweetness of coconut. Perfect for summer gatherings or as a refreshing treat.
Ingredients
- 1 cup lime sherbet, slightly softened
- 2 ounces Key Lime Pie Liqueur
- 1 cup ice (for green layer)
- 2 ounces cream of coconut
- 4 ounces coconut water
- 1 cup ice (for white layer)
- Optional: 1 to 2 ounces white rum
- Lime wheel (for garnish)
- Toasted coconut flakes (for garnish)
Instructions
- In a blender, combine the lime sherbet, Key Lime Pie Liqueur, and 1 cup of ice. Blend until smooth and pour into two tall cocktail glasses, filling halfway.
- Rinse the blender. Add cream of coconut, coconut water, and 1 cup of ice (plus white rum if using). Blend until smooth.
- Gently pour the white layer over the green layer in each glass to create a layered effect.
- Garnish with a lime wheel and toasted coconut flakes. Serve immediately.
Notes
- For a non-alcoholic version, omit the liqueur and rum, and add more sherbet or lime juice.
- Try different sherbet flavors for a unique twist.
- Add vanilla ice cream to the white layer for extra creaminess.
- Mint leaves can add a refreshing herbal note.
- Best enjoyed immediately, but layers can be stored separately in the freezer and re-blended before serving.
