Ingredients
- 4 oz cream cheese or coconut butter
- 2 tbsp butter or additional coconut butter
- 3 tbsp powdered sugar or erythritol
- 1/2 tsp instant coffee
- 3 oz chocolate chips or broken-up chocolate (optional)
Instructions
- Bring the cream cheese and butter (or coconut butter) to room temperature.
- Combine all ingredients in a mixing bowl and whip until smooth using hand beaters or a fork.
- Spread the filling into a shallow container or freeze the mixing bowl until firm enough to scoop.
- Form the mixture into balls using a mini cookie scoop or spoon and place them on a lined plate.
- Refrigerate or freeze the truffles until firm.
- Optionally, dip the chilled truffles into melted chocolate and return to the plate to set.
