Description

Cranberry Brie Bites are delightful bite-sized appetizers featuring creamy Brie cheese, tangy whole berry cranberry sauce, and crunchy roasted pecans nestled in flaky crescent dough. Perfectly topped with fresh rosemary and baked until golden brown, these savory-sweet minis are ideal for holiday gatherings or elegant parties.

Ingredients

Pastry

  • Cooking spray, for greasing
  • All-purpose flour, for dusting
  • 1 tube crescent dough

Filling

  • 1 wheel Brie cheese (about 8 ounces)
  • 1/2 cup whole berry cranberry sauce
  • 1/4 cup finely chopped roasted, unsalted pecans
  • 6 rosemary sprigs, cut into 1-inch pieces

Instructions

  1. Prepare the oven and pan: Arrange a rack in the center of the oven and preheat it to 375°F (190°C). Grease a 24-cup mini muffin tin thoroughly with cooking spray to prevent sticking.
  2. Prepare the dough: On a clean surface lightly dusted with all-purpose flour, unroll the crescent dough and gently pinch together all seams to form one solid sheet. Cut the dough into 24 equal squares large enough to fit into the mini muffin cups. Press each square firmly into the cups, molding the dough to the shape of the tin.
  3. Add the filling: Slice the Brie wheel into small pieces and place one piece inside the center of each dough-lined muffin cup. Top each with a spoonful of whole berry cranberry sauce, then sprinkle with finely chopped roasted pecans. Finally, place one small rosemary sprig piece on top of each for a fresh aromatic touch.
  4. Bake: Place the muffin tin in the center rack of the preheated oven and bake for approximately 15 minutes, or until the pastry is puffed and golden brown, and the Brie is melted and bubbly.
  5. Serve: Remove the bites from the oven and allow them to cool slightly for easier handling. Serve warm as an appetizer or party snack.

Notes

  • If you prefer a milder rosemary flavor, you can omit the rosemary sprigs or substitute with thyme.
  • Use room temperature Brie for easier slicing and melting.
  • To make ahead, assemble the bites and refrigerate them for up to 4 hours before baking.
  • For a nuttier flavor, substitute pecans with walnuts or almonds if desired.
  • Serve these bites warm to enjoy the melted Brie at its best; reheat gently if necessary.
