Description

A rich and spicy pasta dish featuring Cajun-seasoned chicken in a creamy garlic mozzarella sauce, perfect for a quick and indulgent dinner.

Ingredients

  • 2 chicken breasts
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 8 oz spaghetti
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season chicken breasts generously with Cajun seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden and cooked through. Remove from skillet and set aside.
  3. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  4. In the same skillet, melt butter and sauté garlic until fragrant.
  5. Whisk in flour and cook for about 1 minute to form a roux.
  6. Gradually whisk in chicken broth and heavy cream. Cook until the sauce is smooth and thickened.
  7. Stir in mozzarella and Parmesan cheese until melted and creamy.
  8. Slice cooked chicken and return to the skillet. Add the cooked spaghetti and toss to coat in the sauce.
  9. Garnish with chopped parsley if desired and serve warm.

Notes

  • Use shrimp instead of chicken for a seafood variation.
  • Add smoked paprika to intensify the flavor.
  • Include red pepper flakes for extra heat.
  • Try different pasta shapes like penne or fettuccine.
  • Half-and-half can be used to reduce the richness of the sauce.
