Ingredients
- 2 chicken breasts
- 2 tbsp Cajun seasoning
- 2 tbsp olive oil
- 8 oz spaghetti
- 2 tbsp butter
- 3 garlic cloves, minced
- 2 tbsp all-purpose flour
- 1 1/2 cups chicken broth
- 1 cup heavy cream
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt and black pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Season chicken breasts generously with Cajun seasoning.
- Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden and cooked through. Remove from skillet and set aside.
- Cook spaghetti according to package instructions until al dente. Drain and set aside.
- In the same skillet, melt butter and sauté garlic until fragrant.
- Whisk in flour and cook for about 1 minute to form a roux.
- Gradually whisk in chicken broth and heavy cream. Cook until the sauce is smooth and thickened.
- Stir in mozzarella and Parmesan cheese until melted and creamy.
- Slice cooked chicken and return to the skillet. Add the cooked spaghetti and toss to coat in the sauce.
- Garnish with chopped parsley if desired and serve warm.
