Ingredients
Noodles and Seasoning
- 2 packages of buldak carbonara noodles
- 2 noodle seasoning packets (included with noodles)
Sauce
- 2 teaspoons toasted sesame oil
- 2 tablespoons Kewpie mayonnaise
- 2 egg yolks
- 4 tablespoons boiling noodle water
Garnishes
- Green onions, thinly sliced
- Parmesan cheese, grated
- Furikake (optional)
Instructions
- Boil the Noodles: Bring a pot of water to a boil and cook the buldak carbonara noodles for 5 minutes until tender but firm. Drain the noodles, reserving some boiling water for the sauce.
- Prepare the Sauce Mixture: In a bowl, combine the toasted sesame oil, Kewpie mayonnaise, and egg yolks. Whisk these ingredients together until well blended, creating a creamy base.
- Incorporate Boiling Water Carefully: Slowly add 4 tablespoons of the reserved hot noodle water into the sauce mixture while stirring quickly to temper the egg yolks and avoid curdling, forming a smooth and silky sauce.
- Add Seasoning Packets: Mix the two noodle seasoning packets into the sauce mixture thoroughly to infuse it with the signature spicy and savory flavors.
- Coat the Noodles: Add the drained noodles into the sauce bowl. Toss and mix well until every strand is evenly coated with the creamy carbonara sauce.
- Garnish and Serve: Transfer the coated noodles to serving bowls. Sprinkle thinly sliced green onions, grated Parmesan cheese, and optional furikake on top to enhance flavor and texture. Serve immediately for best taste.
Notes
- Be sure to stir vigorously when adding hot water to the egg yolks to prevent them from scrambling.
- Furikake adds a nice umami crunch but can be omitted if unavailable.
- Kewpie mayonnaise contributes to the creamy texture and slightly sweet flavor characteristic of this recipe.
- Use freshly grated Parmesan for the best flavor.
- This dish is best enjoyed immediately to preserve the creamy sauce texture.
