Vegetables & Aromatics

  • 2 Celery Stalks, finely diced
  • 2 Carrots, finely diced
  • ½ Yellow Onion, finely diced

Pasta

  • 8 ounces Orzo Pasta

Liquids & Fats

  • 5 tablespoons Butter
  • 2 tablespoons Olive Oil
  • 2 cups Chicken Broth
  • ½ cup Heavy Whipping Cream

Other

  • 1 teaspoon Chicken Bouillon Powder
  • ⅓ cup All Purpose Flour


Instructions

  1. Cook the Orzo: Prepare the orzo pasta according to the package instructions until al dente, then drain and set aside.
  2. Season and Cook Chicken: Season the chicken breasts evenly with onion powder, garlic powder, paprika, salt, and black pepper. Heat a splash of olive oil in a skillet over medium-high heat and cook the chicken until it reaches an internal temperature of 165°F (74°C). Remove from heat and dice into bite-sized pieces.
  3. Sauté Vegetables: In a large skillet over medium-high heat, melt the butter with olive oil. Add the diced onion, carrots, and celery, sautéing them for 4 to 5 minutes until softened.
  4. Make the Roux: Lower the heat to low and sprinkle the all-purpose flour over the softened vegetables. Stir continuously, whisking the mixture until it forms a smooth paste or roux. Continue to cook for 2 to 3 minutes while stirring constantly to remove the raw flour taste.
  5. Add Liquids and Thicken: Gradually pour in the chicken broth and heavy whipping cream while whisking to avoid lumps. Add the chicken bouillon powder and stir until the sauce starts to thicken into a creamy consistency.
