Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup Parmesan cheese, grated
- 2 tbsp fresh parsley, chopped (plus more for garnish)
- 2 cups cooked jasmine or basmati rice
- 2 tbsp mixed fresh herbs (dill, basil, or cilantro), chopped
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 1 tbsp lemon juice (optional)
Instructions
- Season shrimp with salt and pepper.
- Heat olive oil in a skillet and cook shrimp for 2-3 minutes per side until pink and slightly golden. Remove from pan.
- In the same skillet, add butter and garlic, sauté until fragrant.
- Stir in heavy cream, let simmer for 2 minutes, then add Parmesan cheese.
- Return shrimp to the skillet and coat in the creamy sauce.
- In a bowl, mix cooked rice with fresh herbs, olive oil, salt, and lemon juice if desired.
- Serve creamy shrimp over herb rice and garnish with chopped parsley.
