Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil or butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh rosemary, chopped)
  • 1 teaspoon dried parsley (or 1 tablespoon fresh parsley, chopped)
  • 1/2 cup grated Parmesan cheese (optional)
  • Fresh chopped parsley, for garnish

Instructions

  1. Pat the chicken breasts dry and season both sides generously with salt and black pepper.
  2. Heat olive oil or butter in a skillet over medium-high heat. Sear the chicken for 6–7 minutes per side, until golden and cooked through (internal temp 165°F / 75°C). Remove and set aside.
  3. In the same skillet, sauté the minced garlic for about 30 seconds until fragrant.
  4. Add chicken broth, scraping up the browned bits from the pan for extra flavor.
  5. Stir in the heavy cream, Dijon mustard, thyme, rosemary, parsley, and Parmesan (if using). Let the sauce simmer for 3–5 minutes until it thickens slightly.
  6. Return the chicken to the skillet, spooning sauce over each piece. Simmer for 2–3 minutes more to meld the flavors.
  7. Garnish with fresh parsley and serve hot over mashed potatoes, rice, or vegetables.

Notes

  • Chicken thighs can be used for richer flavor; adjust cook time as needed.
  • For a lighter version, use half-and-half or whole milk with a little cornstarch.
  • Full-fat coconut milk makes a great dairy-free substitute.
  • Store leftovers in an airtight container for up to 3 days; reheat gently to preserve the creamy texture.
