Ingredients
For the Batter
- ½ cup all-purpose flour
- 1½ tablespoon cornmeal
- 1 tablespoon sugar
- 1 tablespoon baking powder
- ½ cup + 1 tablespoon cold milk
- 1 tablespoon lemon juice
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
Vegetables
- 2 cups chopped onions
- 2 stalks green onions, chopped (white parts and green parts)
For Frying
- Oil (about 1 inch for frying, quantity as needed)
Instructions
- Heat the oil: Add about an inch of oil to a heavy-bottomed pan and place it over medium heat, allowing the oil to heat evenly for frying.
- Prepare draining area: Line a small sheet pan or a large plate with paper towels and set it aside to drain excess oil from the fritters after frying.
- Mix dry ingredients: In a large bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, salt, pepper, garlic powder, and paprika. Stir thoroughly to distribute the spices and leavening agents evenly.
- Add wet ingredients: Pour the cold milk and lemon juice into the bowl with the dry ingredients and stir gently until you achieve a smooth batter.
- Add onions: Fold the chopped onions and green onions into the batter quickly, ensuring they are well coated but not overmixed.
- Fry fritters: Carefully spoon a heaping tablespoon of batter at a time into the hot oil, making sure there is enough space between each to avoid overcrowding. Fry in batches as needed.
- Cook evenly: Fry each fritter for 3 to 4 minutes on one side until golden and crispy, then flip and cook for an additional 3 to 4 minutes, adjusting time depending on size, to ensure thorough cooking and crispness.
- Drain and serve: Transfer the fried onion fritters to the prepared paper towels to drain excess oil. Continue frying remaining batter in the same manner. Serve immediately, either plain or with your favorite dipping sauce.
Notes
- Ensure the oil is hot enough before frying; a drop of batter should sizzle immediately.
- Do not overcrowd the pan to maintain oil temperature and crispiness.
- Use cold milk to help the batter stay crisp when fried.
- Onion fritters are best served fresh and warm for optimal texture.
- You can customize the spices according to your taste preference.
