Crispy, flavorful roasted cabbage steaks — a simple, healthy side or light main dish
Ingredients
- 1 large green or red cabbage
- 3 tablespoons olive oil (or melted butter)
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon dried thyme
- 1 teaspoon salt (or to taste)
- ½ teaspoon black pepper
- Optional toppings: grated Parmesan cheese, red pepper flakes, fresh parsley
Instructions
- Preheat oven to 400 °F (200 °C). Line a baking sheet with parchment paper or grease it.
- Remove outer leaves of cabbage if wilted, and slice into ~¾‑inch thick “steaks,” keeping the core intact.
- In a small bowl, mix olive oil, garlic powder, smoked paprika, onion powder, thyme, salt, and black pepper.
- Brush the seasoning mixture onto both sides of each cabbage steak.
- Arrange the steaks in a single layer on the baking sheet, leaving space between them.
- Roast for 25–30 minutes, flipping once halfway, until edges are golden and crisp and centers are tender.
- Remove from oven, let cool slightly, and garnish with optional toppings before serving.
Notes
- You can also cook in an air fryer at ~375 °F (190 °C) for 10–15 minutes, flipping halfway.
- Don’t overcrowd the pan — allow space so they roast rather than steam.
- Adjust salt and spices to taste. You can experiment with curry powder, Cajun mix, or lemon juice to vary flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in oven or air fryer to restore crispness.
