Description

Crispy, flavorful roasted cabbage steaks — a simple, healthy side or light main dish


Ingredients

  • 1 large green or red cabbage
  • 3 tablespoons olive oil (or melted butter)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • Optional toppings: grated Parmesan cheese, red pepper flakes, fresh parsley

Instructions

  1. Preheat oven to 400 °F (200 °C). Line a baking sheet with parchment paper or grease it.
  2. Remove outer leaves of cabbage if wilted, and slice into ~¾‑inch thick “steaks,” keeping the core intact.
  3. In a small bowl, mix olive oil, garlic powder, smoked paprika, onion powder, thyme, salt, and black pepper.
  4. Brush the seasoning mixture onto both sides of each cabbage steak.
  5. Arrange the steaks in a single layer on the baking sheet, leaving space between them.
  6. Roast for 25–30 minutes, flipping once halfway, until edges are golden and crisp and centers are tender.
  7. Remove from oven, let cool slightly, and garnish with optional toppings before serving.

Notes

  • You can also cook in an air fryer at ~375 °F (190 °C) for 10–15 minutes, flipping halfway.
  • Don’t overcrowd the pan — allow space so they roast rather than steam.
  • Adjust salt and spices to taste. You can experiment with curry powder, Cajun mix, or lemon juice to vary flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in oven or air fryer to restore crispness.
