Crock Pot Creamy Cajun Chicken Pasta is a rich, spicy, and indulgent slow cooker meal with tender chicken, creamy Cajun sauce, and pasta, perfect for an easy yet satisfying dinner.
Ingredients
- 2–3 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 3 cloves garlic, minced
- 1 onion, diced
- 2 bell peppers, sliced (any color)
- 1 cup chicken broth
- 8 oz cream cheese, cubed
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 12 oz penne or fettuccine pasta
- Salt and pepper to taste
- 1 tablespoon olive oil or butter (for searing chicken)
Instructions
- Season chicken breasts with Cajun seasoning on both sides.
- Optional: Sear chicken in a skillet with olive oil or butter until golden brown.
- Place chicken, garlic, onion, bell peppers, and chicken broth into the crock pot. Cover and cook on low for 4–5 hours or high for 2–3 hours until chicken is tender.
- Remove the chicken, shred or slice it, and return it to the crock pot.
- Stir in cream cheese, heavy cream, and Parmesan cheese until melted and smooth.
- Cook pasta separately according to package instructions, drain, and add to the crock pot. Stir to combine with the sauce.
- Taste and adjust seasoning with salt, pepper, or additional Cajun seasoning if desired. Serve warm.

- Swap chicken with smoked sausage or shrimp for variation.
- Use half-and-half for a lighter version.
- Add spinach or mushrooms near the end for extra veggies.
- Serve over zucchini noodles or cauliflower rice for a low-carb option.
