Description

Crock Pot Creamy Cajun Chicken Pasta is a rich, spicy, and indulgent slow cooker meal with tender chicken, creamy Cajun sauce, and pasta, perfect for an easy yet satisfying dinner.


Ingredients

  • 23 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 2 bell peppers, sliced (any color)
  • 1 cup chicken broth
  • 8 oz cream cheese, cubed
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 12 oz penne or fettuccine pasta
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter (for searing chicken)

Instructions

  1. Season chicken breasts with Cajun seasoning on both sides.
  2. Optional: Sear chicken in a skillet with olive oil or butter until golden brown.
  3. Place chicken, garlic, onion, bell peppers, and chicken broth into the crock pot. Cover and cook on low for 4–5 hours or high for 2–3 hours until chicken is tender.
  4. Remove the chicken, shred or slice it, and return it to the crock pot.
  5. Stir in cream cheese, heavy cream, and Parmesan cheese until melted and smooth.
  6. Cook pasta separately according to package instructions, drain, and add to the crock pot. Stir to combine with the sauce.
  7. Taste and adjust seasoning with salt, pepper, or additional Cajun seasoning if desired. Serve warm.
