Description

Doritos Casserole is a hearty and flavorful dish that combines the crunch of Doritos with savory ground beef, seasoned with taco spices, and layered with creamy sour cream and cheese. This cheesy, Tex-Mex casserole is perfect for a family dinner or casual gathering, offering a zesty twist on traditional casserole recipes.

Ingredients

Crunchy Toppings

  • 2 cups Doritos, finely crushed
  • 1 cup Doritos, loosely crushed

Main Ingredients

  • 1 pound ground beef
  • ½ yellow onion, diced
  • 1 teaspoon garlic, minced
  • 12 ounces frozen corn
  • 1 packet taco seasoning
  • 1 (14.5-ounce) can petite diced tomatoes with green chilies, NOT drained

Dairy

  • 1 cup sour cream
  • 3 cups Mexican cheese blend

Optional Garnishes

  • Sliced green onions
  • Diced tomatoes
  • Shredded lettuce
  • Avocado
  • Sour cream

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it's ready for baking the casserole evenly.
  2. Cook Ground Beef Mixture: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes. Stir in frozen corn, and combine well.
  3. Add Seasoning and Tomatoes: Sprinkle the taco seasoning over the beef mixture and stir to coat evenly. Pour in the undrained can of petite diced tomatoes with green chilies and stir. Simmer for 5 minutes to blend flavors and heat through.
  4. Mix in Sour Cream: Remove the skillet from heat and fold in the cup of sour cream until the mixture is creamy and well combined.
  5. Layer the Casserole: In a 9x13-inch baking dish, spread 2 cups of finely crushed Doritos evenly on the bottom. Pour the beef mixture over the Doritos and spread gently. Sprinkle 3 cups of Mexican cheese blend over the top, then add the loosely crushed 1 cup Doritos evenly as a crunchy topping.
  6. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes or until the cheese is melted, bubbly, and slightly golden.
  7. Garnish and Serve: Remove from the oven and let the casserole cool slightly. Garnish with sliced green onions, diced tomatoes, shredded lettuce, avocado slices, and extra sour cream if desired. Serve warm.

Notes

  • Use spicy Doritos if you want to add a kick of heat to the dish.
  • For a creamier texture, mix some cream cheese into the sour cream before combining with the beef.
  • To make this gluten-free, verify that the Doritos and taco seasoning packet are gluten-free.
  • Leftovers can be stored airtight in the refrigerator for up to 3 days and reheated in the oven or microwave.
  • Feel free to customize the casserole by adding black beans or jalapeños for extra flavor.
