Ingredients
- 1 thick slice of good-quality bread (whole grain, sourdough, or country loaf)
- ½ ripe avocado

- Optional extras: olive oil, fresh lemon juice, red pepper flakes, everything-bagel seasoning, sliced tomatoes, eggs, smoked salmon, fresh herbs
Instructions
- Toast the bread until golden-brown and crisp.
- Cut the avocado in half, remove the pit, scoop the flesh into a small bowl, and mash it with a fork until mostly smooth.
- Mix in a pinch of sea salt and a squeeze of lemon juice if using.
- Spread the mashed avocado evenly over the toast.
- Drizzle with olive oil and sprinkle with flaky salt, then add any desired extra toppings.
Notes
- Eat the toast fresh to avoid sogginess and browning of the avocado.
- Store leftover mashed avocado in an airtight container with plastic wrap pressed on the surface and use within a day.
- Customize with various toppings like eggs, smoked salmon, or tomatoes for variety.
