Description

This Easy Sausage and Egg Casserole is a hearty, protein-packed breakfast or brunch dish perfect for busy mornings or family gatherings. Made with savory turkey sausage, fluffy eggs, cheese, and optional vegetables and bread cubes, it’s baked to golden perfection for a comforting and satisfying meal.

Ingredients

Meat

  • 1 pound turkey sausage

Egg Mixture

  • 6 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika

Dairy

  • 1 cup shredded cheddar cheese (or preferred cheese blend)

Vegetables (Optional)

  • 1/2 cup diced bell peppers
  • 1/2 cup chopped spinach
  • 1/4 cup diced onions

Other

  • 2 cups bread cubes (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Lightly grease a 7×11-inch (or 8×11-inch) baking dish with butter or nonstick spray to prevent sticking.
  2. Prepare the Sausage: Brown the turkey sausage in a skillet over medium heat, breaking it into small crumbles as it cooks. Once browned through, drain any excess grease and set the sausage aside.
  3. Mix the Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, and smoked paprika until fully combined and slightly frothy.
  4. Assemble the Casserole: In the prepared baking dish, layer the cooked sausage, optional diced bell peppers, spinach, and onions, and shredded cheddar cheese. If using, sprinkle the bread cubes evenly on top. Pour the egg mixture evenly over all the ingredients to soak the layers.
  5. Bake: Place the casserole in the preheated oven and bake for 30 to 40 minutes, or until the center is set and the top is golden brown. A knife inserted into the center should come out clean.
  6. Cool and Serve: Remove the casserole from the oven and let it cool for about 5 minutes before slicing. Serve warm and enjoy this delicious, filling meal.

Notes

  • You can substitute turkey sausage with pork or chicken sausage if preferred.
  • Vegetables like mushrooms, zucchini, or tomatoes can be added to customize the casserole.
  • For a gluten-free option, omit the bread cubes or use gluten-free bread.
  • Make sure to drain excess grease from sausage to avoid a greasy casserole.
  • The casserole can be prepared a day in advance and refrigerated before baking.
