Ingredients
Vegetables & Aromatics
- 2 tablespoons avocado oil
- 1/2 large yellow onion, chopped
- 1 green bell pepper, chopped
- 5 cups cubed sweet potatoes
- 3 garlic cloves, minced
Protein
- 1 pound turkey sausage
- 10 eggs
Dairy & Seasonings
- 1/2 cup milk (plant-based milk can be substituted)
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup grated mozzarella cheese
Instructions
- Preheat and prepare skillet: Preheat your oven to 350°F (175°C). Heat the avocado oil in a large oven-safe skillet or sauté pan over medium heat.
- Sauté vegetables: Add the chopped yellow onion and green bell pepper to the skillet. Cook for about 5 minutes until they are softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Cook sweet potatoes: Add the cubed sweet potatoes to the skillet with the vegetables. Cook for 8-10 minutes, stirring occasionally, until the sweet potatoes begin to soften.
- Brown turkey sausage: Push the vegetables and sweet potatoes to the side of the pan and add the turkey sausage. Break it up with a spoon and cook until it is browned and cooked through, about 6-8 minutes. Mix all ingredients evenly in the skillet.
- Prepare egg mixture: In a large bowl, whisk together the eggs, milk, dried thyme, salt, and pepper until fully combined and slightly frothy.
- Combine and add cheese: Pour the egg mixture evenly over the sausage and vegetable mixture in the skillet. Sprinkle the grated mozzarella cheese on top evenly.
- Bake the casserole: Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the eggs are fully set and the top is lightly golden.
- Serve: Remove from the oven and let rest for a few minutes before slicing. Serve warm and enjoy this nutritious and filling casserole.
Notes
- You can substitute turkey sausage with chicken sausage or a vegetarian sausage alternative for variations.
- Plant-based milk such as almond or oat milk works well if you want a dairy-free option.
- For extra flavor, consider adding chopped fresh herbs like parsley or cilantro before serving.
- This casserole can be made the night before; refrigerate and bake fresh in the morning, adding 5 extra minutes to the baking time.
- Leftovers keep well in the refrigerator for up to 3 days and reheat nicely in the microwave or oven.
