Description
These fluffy, golden sugar-topped cookies are made with cottage cheese for a soft, tender interior and a crisp, caramelized sugar topping. Easy to prepare and perfect for any occasion.
Ingredients
- 1 cup cottage cheese (preferably full-fat, blended smooth)
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 tbsp baking powder
- 1/4 cup granulated sugar (plus extra for sprinkling)
- 1 pinch of salt
Instructions
- Mash or blend the cottage cheese until smooth.
- In a large bowl, mix softened butter with the cottage cheese until creamy.
- Add flour, baking powder, sugar, and salt. Mix until a soft dough forms.
- Roll the dough out on a floured surface to about 1 cm thickness.
- Cut into squares or desired shapes using a cookie cutter or knife.
- Dip the tops of the cookies in granulated sugar and press lightly.
- Place the cookies sugar-side up on a parchment-lined baking tray.
- Bake in a preheated oven at 180°C (350°F) for 20–25 minutes until golden and puffed.
Notes
- Add vanilla extract or lemon zest for extra flavor.
- Mix cinnamon with sugar for a spiced version.
- Try whole wheat flour for a nuttier taste.
- Fold in raisins or mini chocolate chips for variation.
- Brush tops with beaten egg for a richer finish before baking.
- Store in airtight container for 4–5 days at room temperature or freeze for up to 1 month.
- Reheat in oven at 150°C (300°F) for 5 minutes to refresh.
