Description

A comforting, savory one-dish meal that combines tender chicken, caramelized onions, creamy sauce, and fluffy rice topped with melted cheese.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1 cup long-grain white rice
  • 2 large yellow or sweet onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1.5 cups beef or chicken broth
  • 1/2 cup heavy cream or sour cream
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 tsp dried thyme
  • 1.5 cups shredded Gruyère, Swiss or mozzarella cheese

Instructions

  1. Preheat oven to 375 °F (190 °C).
  2. Thinly slice onions and sauté in butter and olive oil over medium heat until deeply caramelized.
  3. Lightly season chicken with salt, pepper and thyme; brown in the skillet and set aside.
  4. In the same pan, stir in minced garlic, broth, cream, and soup, scraping up browned bits.
  5. Combine sauce with uncooked rice in a casserole dish; nestle chicken pieces on top.
  6. Top with caramelized onions and shredded cheese.
  7. Cover tightly with foil and bake until rice is tender and chicken is cooked through, about 35–40 minutes.
  8. Remove foil and bake another 5–10 minutes to melt and lightly brown the cheese.
  9. Let rest a few minutes before serving.

Notes

  • Use thawed chicken for even cooking.
  • Add mushrooms or spinach for extra veggies.
  • Substitute cheddar or Monterey Jack cheese as needed.
  • For lighter version, use half-and-half and low-sodium soup.
  • Add splash of broth or water when reheating leftovers to prevent dryness.
