Ingredients

Caramelized Onions

  • 1 large red, sweet or yellow onion, thinly sliced about 1/8 inch thick
  • 1-2 tablespoons olive oil

  • Pinch fresh cracked pepper
  • 1 teaspoon fresh thyme (optional)
  • 1/4 cup sherry cooking wine, port, or beef stock (optional; or a splash of balsamic vinegar as substitute)

Sandwich

  • 4 slices hearty bread or French bread
  • 1 tablespoon butter (or substitute olive oil)
  • 1 tablespoon olive oil
  • 1 cup grated or sliced Gruyere cheese (or meltable vegan cheese)
  • Whole grain mustard (optional)


Instructions

  1. Caramelize the onions: In a large heavy-bottomed skillet or cast iron pan, heat 1-2 tablespoons olive oil over medium heat. Add the thinly sliced onions and sauté for 5 minutes, stirring occasionally to coat evenly.
  2. Continue cooking low and slow: Reduce heat to medium-low and stir occasionally, allowing the onions to sweat out moisture and slowly caramelize over 20 minutes until deep golden brown.
  3. Add seasoning and deglaze: Season the onions with a generous pinch of salt and a splash of port, sherry, or beef stock (optional). Let the liquid cook off. Remove the onions from the pan and wipe out the skillet with a paper towel to prepare for toasting. Preheat the oven to 350°F (175°C).
  4. Assemble the sandwiches: Optionally, spread whole grain mustard on the bread slices. On two slices, layer half of the Gruyere cheese, then the caramelized onions, sprinkle with fresh thyme leaves if using, and top with the remaining cheese. Close the sandwiches with the remaining bread slices and gently press together.
  5. Toast the sandwiches: Heat butter and olive oil in the same skillet over medium-low heat. Place the sandwiches in the pan and toast them, carefully flipping when the bread is perfectly golden brown and the cheese begins to melt.
