Ingredients

Fruit Salad:

  • 1 lb. strawberries, sliced or diced
  • 1 lb. fresh pineapple, diced
  • 3 mandarin oranges, peeled, segmented & cut in half
  • 4 kiwis, peeled & diced
  • 1- cups blueberries (about 12 ounces)

Honey-Lime Poppy Seed Dressing:

  • 3 limes, juiced
  • 3 tsp honey
  • ½ tsp poppy seeds


Instructions

  1. Make the dressing: Whisk the lime juice, honey, and poppy seeds together in a small bowl until well combined. Set aside to let the flavors meld.
  2. Assemble the salad: In a large bowl, combine the chopped strawberries, diced pineapple, mandarin orange segments, diced kiwi, and blueberries, gently mixing to blend the fruits evenly.
  3. If serving immediately: Pour your desired amount of dressing over the fruit mixture and toss gently until the salad is fully coated and glossy.
  4. If serving later: Cover the bowl with plastic wrap and refrigerate the fruit salad for at least 1 hour to chill and let the flavors develop. When ready to serve, toss with the dressing and serve immediately.
