Description

These fudgy brownie cookies combine the best of chewy cookies and rich brownies, with a crackly top and melty center, packed with chocolate flavor.


Ingredients

  • 1 cup semi-sweet chocolate chips (plus extra for topping)
  • 1/4 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Melt chocolate chips and butter together until smooth using a double boiler or microwave.
  2. In a mixing bowl, whisk together granulated sugar, brown sugar, and eggs until light and fluffy.
  3. Stir in the melted chocolate mixture and vanilla extract.
  4. In a separate bowl, mix flour, cocoa powder, baking powder, and salt.
  5. Gradually fold dry ingredients into wet mixture until combined.
  6. Let batter sit for 10 minutes to thicken.
  7. Scoop dough onto a lined baking sheet, spacing them apart.
  8. Top each scoop with extra chocolate chips.
  9. Bake at 350°F (175°C) for 10–12 minutes until tops are shiny and crackled but centers are soft.
  10. Cool on baking sheet for 5 minutes before transferring to a wire rack.
