Ingredients
- 1.5 lbs sirloin steak, cut into bite-sized cubes
- 1.5 lbs baby potatoes, halved or quartered
- 2 tbsp olive oil, divided
- Salt and black pepper, to taste
- 4 cloves garlic, minced
- 3 tbsp unsalted butter
- 2 tbsp fresh parsley, chopped (for garnish)
- Optional: 1/4 tsp crushed red pepper flakes
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the potatoes, season with salt and pepper, and cook until golden and fork-tender, stirring occasionally. Remove and set aside.
- In the same skillet, add remaining olive oil if needed. Sear steak bites in batches without overcrowding the pan. Cook until browned on all sides and cooked to desired doneness.
- Add minced garlic and butter to the skillet. Sauté until garlic is fragrant.
- Return potatoes and steak to the skillet. Toss everything together to coat in garlic butter.
- Garnish with chopped parsley and optional red pepper flakes before serving.
