Description

A savory and satisfying dish featuring tender garlic butter steak bites paired with perfectly crispy and golden Yukon gold potatoes, seasoned with herbs and cooked in a cast iron skillet for a delicious meal ready in under 30 minutes.

Ingredients

For the Steak and Potatoes

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Prep: Begin by cutting the Yukon gold potatoes and sirloin steak into ½ inch cubes, and mincing the garlic cloves.
  2. Heat the Pan: Place a large cast iron skillet over medium heat. Add one tablespoon of olive oil and two tablespoons of ghee or butter to the skillet and allow them to melt and heat up.
  3. Cook the Potatoes: Once the ghee is melted, add the cubed potatoes to the skillet. Sprinkle the minced garlic, dried thyme, dried oregano, ½ teaspoon sea salt, and ¼ teaspoon ground black pepper over the potatoes. Let the potatoes cook without stirring for 2-3 minutes to start browning, then stir and continue to cook, stirring frequently every 1-2 minutes, until the potatoes are golden brown and fork tender, about 8-10 minutes. Remove the potatoes and any browned bits from the pan and set aside.
  4. Sear the Steak: Increase the skillet heat to medium-high and add the remaining two tablespoons of ghee or butter to the pan. Allow it to melt fully. Add the steak cubes to the skillet and season with a pinch of salt and pepper. Cook the steak without stirring for at least 2 minutes to get a good sear, then stir the pieces and continue cooking until the steak is golden brown, about an additional 1-2 minutes.
  5. Combine and Finish: Return the cooked potatoes to the skillet with the steak. Stir gently to combine all ingredients. Taste and add more salt and black pepper if needed. Garnish with freshly chopped parsley before serving.

Notes

  • Ensure the potatoes are cut uniformly to cook evenly and achieve the perfect crispy texture.
  • Do not overcrowd the pan when cooking potatoes or searing steak to allow proper browning.
  • Cast iron skillet is recommended for best heat retention and searing quality.
  • For a dairy-free option, substitute ghee with a plant-based butter alternative.
  • This dish pairs well with a simple green salad or steamed vegetables for a balanced meal.
