Ingredients
- 4 chicken breasts or thighs
- 2 tbsp olive oil or butter
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tbsp chopped fresh parsley (plus more for garnish)
- Salt and pepper to taste
- 2 lbs potatoes (Yukon Gold or Russet), peeled and chopped
- 1/2 cup milk or cream
- 3 tbsp butter
- 4 large carrots, peeled and sliced
- 2 tbsp brown sugar or honey
- 2 tbsp water
Instructions
- Season chicken with garlic, thyme, rosemary, parsley, salt, and pepper.
- Heat olive oil or butter in a skillet over medium heat. Sear chicken until golden brown on both sides and cooked through (internal temperature of 165°F).
- Meanwhile, boil potatoes in salted water until fork-tender. Drain and mash with butter, milk or cream, salt, and pepper until smooth.
- In a separate pan, simmer carrots with butter, brown sugar or honey, and water until tender and glazed.
- Plate the chicken with mashed potatoes and glazed carrots. Garnish with fresh parsley if desired.
Notes
- Use bone-in, skin-on chicken for more flavor if preferred.
- Swap brown sugar with maple syrup for a different glaze on carrots.
- Add roasted garlic or cream cheese to mashed potatoes for extra richness.
