Description

This Garlic Herb Chicken with Mashed Potatoes and Glazed Carrots is a hearty, comforting, and balanced meal. Juicy, flavorful chicken pairs with creamy mashed potatoes and sweet glazed carrots for a satisfying dinner perfect for family or guests.


Ingredients

  • 4 chicken breasts or thighs
  • 2 tbsp olive oil or butter
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp chopped fresh parsley (plus more for garnish)
  • Salt and pepper to taste
  • 2 lbs potatoes (Yukon Gold or Russet), peeled and chopped
  • 1/2 cup milk or cream
  • 3 tbsp butter
  • 4 large carrots, peeled and sliced
  • 2 tbsp brown sugar or honey
  • 2 tbsp water

Instructions

  1. Season chicken with garlic, thyme, rosemary, parsley, salt, and pepper.
  2. Heat olive oil or butter in a skillet over medium heat. Sear chicken until golden brown on both sides and cooked through (internal temperature of 165°F).
  3. Meanwhile, boil potatoes in salted water until fork-tender. Drain and mash with butter, milk or cream, salt, and pepper until smooth.
  4. In a separate pan, simmer carrots with butter, brown sugar or honey, and water until tender and glazed.
  5. Plate the chicken with mashed potatoes and glazed carrots. Garnish with fresh parsley if desired.

Notes

  • Use bone-in, skin-on chicken for more flavor if preferred.
  • Swap brown sugar with maple syrup for a different glaze on carrots.
  • Add roasted garlic or cream cheese to mashed potatoes for extra richness.
