Description

Juicy chicken breasts or thighs marinated in a savory blend of garlic, Parmesan, herbs, lemon, and olive oil, then grilled to perfection for a flavorful, versatile meal.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons lemon juice
  • 1 tablespoon Italian seasoning
  • Salt and pepper, to taste
  • Optional: fresh parsley or extra Parmesan for garnish

Instructions

  1. In a bowl or zip-top bag, whisk together olive oil, garlic, Parmesan cheese, lemon juice, Italian seasoning, salt, and pepper.
  2. Add the chicken and coat it evenly. Cover and refrigerate for at least 30 minutes, up to 4 hours.
  3. Preheat the grill to medium-high heat and oil the grates to prevent sticking.
  4. Remove chicken from the marinade and grill for 5–7 minutes per side, or until fully cooked and nicely charred.
  5. Let the chicken rest a few minutes before slicing.
  6. Garnish with fresh parsley and extra Parmesan, if desired. Serve warm.

Notes

  • Marinate for up to 4 hours for best flavor, but not more than 12 hours.
  • Substitute with bone-in chicken if desired, adjusting grill time accordingly.
  • Bake at 400 °F (200 °C) for 20–25 minutes as an alternative to grilling.
  • Add red pepper flakes or cayenne for a spicy kick.
  • Use freshly grated Parmesan for the best taste and texture.
