Juicy chicken breasts or thighs marinated in a savory blend of garlic, Parmesan, herbs, lemon, and olive oil, then grilled to perfection for a flavorful, versatile meal.
Ingredients
- 4 boneless, skinless chicken breasts or thighs
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/3 cup grated Parmesan cheese
- 2 tablespoons lemon juice
- 1 tablespoon Italian seasoning
- Salt and pepper, to taste
- Optional: fresh parsley or extra Parmesan for garnish
Instructions
- In a bowl or zip-top bag, whisk together olive oil, garlic, Parmesan cheese, lemon juice, Italian seasoning, salt, and pepper.
- Add the chicken and coat it evenly. Cover and refrigerate for at least 30 minutes, up to 4 hours.
- Preheat the grill to medium-high heat and oil the grates to prevent sticking.
- Remove chicken from the marinade and grill for 5–7 minutes per side, or until fully cooked and nicely charred.
- Let the chicken rest a few minutes before slicing.
- Garnish with fresh parsley and extra Parmesan, if desired. Serve warm.
Notes
- Marinate for up to 4 hours for best flavor, but not more than 12 hours.
- Substitute with bone-in chicken if desired, adjusting grill time accordingly.
- Bake at 400 °F (200 °C) for 20–25 minutes as an alternative to grilling.
- Add red pepper flakes or cayenne for a spicy kick.
- Use freshly grated Parmesan for the best taste and texture.
