Ingredients
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 1 pound large shrimp, peeled and deveined
- 2 cups fresh tomatoes, chopped
- 2 tablespoons fresh dill, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 30 seconds.
- Add shrimp and cook for 3–4 minutes, until pink and opaque. Remove from skillet and set aside.
- Add chopped tomatoes to the skillet and simmer for 3–5 minutes, until softened.
- Return shrimp to the skillet, add chopped dill, and stir to combine.
- Heat everything through for 1–2 minutes and serve warm.
Notes
- Do not overcook shrimp—add them back at the end just to warm through.
- Optional: add red pepper flakes, white wine, or vinegar for extra flavor.
- Substitute dill with parsley, basil, or oregano if needed.
- Serve over pasta, rice, or with crusty bread.
