Ingredients
- 2 lbs potatoes, chopped
- 4 garlic cloves, minced
- ¼ cup olive oil
- Salt & pepper to taste
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400 °F (200 °C).
- Toss diced potatoes with olive oil, garlic, salt, and pepper.
- Spread in a single layer on a baking sheet and roast for 35‑40 minutes, turning halfway through.
- Garnish with parsley before serving.
Notes
- You can vary herbs like rosemary or thyme.
- Don’t overcrowd the pan so potatoes crisp well.
