Description

Crispy on the outside, fluffy on the inside — garlicky roasted potatoes.


Ingredients

  • 2 lbs potatoes, chopped
  • 4 garlic cloves, minced
  • ¼ cup olive oil
  • Salt & pepper to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400 °F (200 °C).
  2. Toss diced potatoes with olive oil, garlic, salt, and pepper.
  3. Spread in a single layer on a baking sheet and roast for 35‑40 minutes, turning halfway through.
  4. Garnish with parsley before serving.

Notes

  • You can vary herbs like rosemary or thyme.
  • Don’t overcrowd the pan so potatoes crisp well.
