  • 6 ounces Greek yogurt
  • 1 large egg
  • ½ cup all-purpose flour

Instructions

  1. Prepare the Batter: Whisk Greek yogurt in a medium bowl until smooth and creamy. Add the egg and whisk again until fully combined and uniform in texture.
  2. Combine Dry Ingredients: In a small bowl, mix together the all-purpose flour and baking soda. Gradually add this dry mixture to the yogurt and egg mixture, whisking until the batter is smooth with no lumps.
  3. Heat the Griddle: Place a griddle or large non-stick skillet over medium-high heat and lightly oil the surface to prevent sticking.
  4. Cook the Pancakes: Drop large spoonfuls of batter onto the hot griddle. Cook until bubbles form on the surface and the edges look dry, about 3 to 4 minutes.
  5. Flip and Finish Cooking: Carefully flip the pancakes and cook the other side until golden brown, approximately 2 to 3 minutes. Repeat this process with the remaining batter.

Notes

  • For a lighter version, you can substitute the whole egg with just an egg white.
